Oven Roasted Summer Vegetables

You can use almost any combination of vegetables for this recipe. It's hard to go wrong when you cook with what's in season. Grab what's in your garden or visit your local farmer's market!

1 cup carrots
1 cup summer squash
1 cup asparagus
1 cup zucchini
1 red bell pepper
1 small onion, thinly sliced
2 tsp. butter
1 cup fat-skimmed chicken broth
Salt or garlic salt and pepper to taste
2 tsp. chopped fresh parsley

Preheat oven to 350°F. Combine ingredients except parsley in shallow non-stick 11x14 inch baking pan, well covered with cooking spray. Cover loosely with a sheet of foil.

Bake 25-30 minutes, basting occasionally with the pan liquid (add a little water if all the liquid evaporates). Sprinkle with chopped fresh parsley before serving.

Panda Butterfly Goldfish Are Coming!

Chances are you've never seen one of these. The tails of Butterfly Goldfish spread out much than a standard fantail goldfish when viewed from above making them excellent for viewing in ponds. Panda Butterfly goldfish have a very distinct and attractive pattern of white and black. They proportion of white to black markings can vary greatly giving each fish a unique look. Although Panda Butterfly are hard to find and tend to be a bit more expensive than other goldfish they are well worth it.
