Plum Ginger Chicken Salad

1-4 to 6 ounce package long grain and wild rice mix
2 cups cooked boneless chicken breast cubes
1/2 cup sliced green onions
4 plums, sliced
2 tablespoons vegetable oil
2 tablespoons lemon juice
1 tablespoon soy sauce
1/2 teaspoon ground ginger


Plums are a fantastic late summer treat.
Prepare rice mix as directed; cool to room temperature. Combine rice, chicken, green onions and sliced plums in large mixing bowl. To prepare dressing, combine oil, lemon juice, soy sauce and ginger; pour over rice mixture and toss lightly. Chill until served. 6 servings.

Cool Tools: The Hori Hori

The hori hori is a gardening tool originally from Japan. A hori hori is a heavy bladed utility knife usually with a serrated edge for slicing through heavy roots for root pruning. It does a bang-up job digging, weeding, opening soil bags and transplanting. It's popular amoung Bonsai gardeners for collecting wild specimens.
