Easy Blueberry Cobbler

Ingredients:

3 cups fresh blueberries
1 tablespoon lemon juice
1 egg beaten
1 cup flour
sugar or substitute to equal 1 1/2 cups sugar
1/4 cup melted margerine
vegetable cooking spray


Blueberries are in season. Yummy!

Preparation:

Place blueberries in bottom of a 10 x 6 x 2 baking dish coated with cooking spray; sprinkle with lemon juice. Combine egg, flour, and sugar substitute; stir until mixture resembles coarse meal. Sprinkle over blueberries. Drizzle melted margarine over top. Bake at 375 degrees for 30 minutes. Serve warm. Serves 6.

Acanthus mollis
'Tasmanian Angel'

Also known as Variegated Bear's Breeches, this specimen is extremely difficult to find but we have it! The bold-textured, dark green leaves with deeply scalloped edges are highlighted by an irregular border that emerges creamy gold, then changes to white as the leaves mature. The older leaves eventually lose most of the coloration. When the 3' wide clumps mature, they are topped with 5' tall spikes of pinkish-purple flowers... simply stunning! Acanthus mollis prefers a rich, moist soil for best performance.
