Fresh Raspberry Vinaigrette
This is a versatile vinaigrette in that you can use it on salads, meat or fish. Both pork and salmon work very well. You can crumble cold, cooked salmon into pieces, marinate in the dressing, and toss with a green salad for a quick and healthy meal. Honestly is there anything better than the taste of fresh raspberries?
1 pint fresh raspberries
2 shallots, diced
1/4 cup Dijon mustard
3/4 cup extra virgin olive oil
1/3 cup raspberry or white wine vinegar
Salt and pepper to taste
