Sorrel Pesto

Sorrel is a wonderful green with a tart bite that adds new life to salads and sauces. Better yet it's a perennial and can produce year around. This recipe is a pesto sauce that works great with pasta or gnocchi. It could also be served with roasted or grilled chicken or fish. This dish also includes manchego, which is a Spanish sheep's cheese. It's on the harder side and possesses a rich, nutty flavor. If you can't find manchego, parmesan will certainly work fine.

• 2 tbsp pine nuts
• 1 small clove garlic, peeled and crushed
• 1-2 handfuls young sorrel leaves
• 1 small bunch flat-leaf parsley
• Sea salt
• 6 tbsp extra-virgin olive oil
• 1 cup manchego cheese, grated


Preparation:

In a small frying pan over a medium heat, lightly toast the pine nuts until they're just beginning to turn golden, then tip out into a food processor. Add the garlic, sorrel, parsley and a pinch of salt to the pine nuts, then pulse a few times until roughly chopped and combined. Slowly pour in the olive oil, pulsing as you go, until the pesto is the consistency you like.

Spoon the pesto mixture into a bowl and stir in the cheese. The pesto will keep, sealed in a jar with a slick of olive oil over the top, for about a week.
